Ingredients
  

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs lightly beaten
  • 1 cup milk
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans thoroughly.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.
  3. In a separate medium bowl, combine the lightly beaten eggs, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredient mixture into the dry ingredients. Stir with a spatula until just combined. Do not overmix; a few lumps are okay.
  5. Divide the batter evenly between the two prepared loaf pans. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the loaves cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely before slicing and serving.

Notes

Do not overmix the batter to ensure a tender and moist bread.
Store the bread in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
