Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1/2 cup sour cream or full-fat Greek yogurt
  • 1 tsp vanilla extract
  • 2 medium apples peeled, cored, and diced small (about 2 cups)
  • 1/2 cup brown sugar packed
  • 1 tbsp ground cinnamon
  • 1 cup powdered sugar
  • 2-3 tbsp milk or cream
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, whisk together the granulated sugar, melted butter, eggs, sour cream, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. In a separate small bowl, combine the diced apples, brown sugar, and cinnamon. Toss to coat evenly.
  6. Spread half of the batter into the prepared loaf pan. Top with half of the apple mixture. Carefully spread the remaining batter on top, followed by the rest of the apple mixture.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil if the top browns too quickly.
  8. Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
  9. Once cool, whisk together the powdered sugar, milk, and vanilla extract. Drizzle the glaze over the bread before slicing and serving.
