  • 8 oz goat cheese log chilled to make slicing easier
  • 6 strips standard-cut bacon cut in half
  • 1 tbsp honey or balsamic glaze for drizzling
  • 1 tsp fresh thyme or chives chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the chilled goat cheese log into 12 1/2-inch thick rounds.
  3. Wrap one half-strip of bacon around the edge of each goat cheese round. Secure the bacon with a toothpick.
  4. Arrange the wrapped goat cheese on the prepared baking sheet. Bake for 15-20 minutes, or until the bacon is crispy and golden brown.
  5. Let cool slightly. Drizzle with honey or balsamic glaze and garnish with fresh herbs before serving.
