Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 3 medium zucchini trimmed and cut into 1/2-inch thick half-moons
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese divided
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 1/4 tsp red pepper flakes optional

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line it with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the cubed chicken and sliced zucchini. Drizzle with olive oil and toss to coat everything evenly.
  3. Sprinkle the Italian seasoning, garlic powder, onion powder, salt, pepper, and optional red pepper flakes over the chicken and zucchini. Add half of the grated Parmesan cheese and toss again until everything is well-coated.
  4. Spread the chicken and zucchini mixture in a single, even layer on the prepared baking sheet. Do not overcrowd the pan.
  5. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the zucchini is tender.
  6. Remove from the oven, sprinkle with the remaining Parmesan cheese, and return to the oven for 2-3 minutes until the cheese is melted. Serve immediately.

Notes

To avoid soggy zucchini, do not overcrowd the baking sheet. Use two sheets if necessary to ensure everything roasts in a single layer.
For extra flavor, you can marinate the chicken in the olive oil and seasonings for 30 minutes before adding the zucchini and baking.
