Ingredients
  

  • 8 oz block feta cheese in brine, patted dry
  • 1 pint cherry tomatoes
  • 3 cloves garlic thinly sliced
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes or more, to taste
  • 1 tbsp honey for drizzling
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or dill for garnish, optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of a small oven-safe baking dish. Arrange the cherry tomatoes and sliced garlic around the feta.
  3. Drizzle the olive oil over the feta and tomatoes. Sprinkle with dried oregano, red pepper flakes, salt, and pepper.
  4. Bake for 20-25 minutes, until the feta is soft and creamy and the tomatoes have burst.
  5. Carefully remove from the oven. Drizzle with honey and garnish with fresh herbs, if using. Serve immediately with crusty bread, pita, or crackers.

Notes

For the best texture, use a block of feta packed in brine, not pre-crumbled feta.
Adjust the amount of red pepper flakes to control the spice level.
