Ingredients

  • 3 cups white chocolate chips about 18 oz
  • 1 can sweetened condensed milk 14 oz
  • 1 medium ripe banana mashed until smooth
  • 2 tbsp unsalted butter cubed
  • 1 tsp banana extract optional, but recommended
  • 1/4 tsp salt

Equipment

  • 1 8x8 inch baking pan
  • Parchment Paper
  • 1 Microwave-safe bowl

Method

  1. Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on the sides to easily lift the fudge out later.
  2. In a large microwave-safe bowl, combine the white chocolate chips, sweetened condensed milk, and cubed butter.
  3. Heat the mixture in the microwave in 30-second intervals, stirring well after each one, until the chocolate is completely melted and the mixture is smooth.
  4. Remove from microwave and stir in the mashed banana, banana extract, and salt. Mix until thoroughly combined.
  5. Pour the fudge into the prepared pan and spread evenly. Refrigerate for at least 4 hours, or until firm.
  6. Lift the fudge from the pan using the parchment paper. Cut into small squares and serve.

Notes

For clean cuts, run a sharp knife under hot water and wipe it dry before each slice.
Store fudge in an airtight container at room temperature for up to one week.
