  • 1 Mixing Bowl Small, for the sauce
  • 1 Spatula For breaking up beef

Ingredients
  

  • 1/2 cup Mayonnaise
  • 2 tbsp Ketchup
  • 1 tbsp Sweet Pickle Relish
  • 1/2 tsp White Vinegar
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • Pinch Sugar
  • Pinch Salt and Black Pepper To taste
  • 1 lb Ground Beef 80/20 or 85/15
  • 1/2 tsp Salt For beef
  • 1/4 tsp Black Pepper For beef
  • 4-6 Large Flour Tortillas
  • 1 tbsp Butter or Oil For toasting
  • 1 cup Shredded Iceberg Lettuce
  • 1/2 cup Finely Chopped White Onion
  • 1/4 cup Dill Pickle Slices Thinly sliced or chopped
  • 4-6 slices American Cheese Or cheddar

Instructions
 

  • In a small bowl, combine the mayonnaise, ketchup, sweet pickle relish, white vinegar, onion powder, garlic powder, smoked paprika, sugar, salt, and pepper. Whisk until well combined. Taste and adjust seasoning. Set aside.
  • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until fully browned (6-8 minutes).
  • Carefully drain off any excess fat from the cooked ground beef. Return the beef to the skillet.
  • Season the drained beef with 1/2 tsp salt and 1/4 tsp black pepper. Stir to combine. Remove from heat.
  • Optional: Warm tortillas in a dry skillet or microwave until pliable (15-30 seconds per side/tortilla).
  • Lay a warm tortilla flat. Spread special sauce down the center. Layer with shredded lettuce, ground beef, chopped onion, pickles, and cheese. Do not overfill.
  • Fold in the sides, then tightly roll from the bottom upwards. Melt butter/oil in the skillet (wipe clean if needed). Place wraps seam-down in the skillet over medium heat. Cook 2-3 minutes per side until golden and crispy.
  • Cut the wraps in half diagonally and serve immediately with extra special sauce.

Notes

To prevent soggy wraps, ensure you thoroughly drain the fat from the cooked ground beef before assembling.
