Ingredients

  • 16 oz Sour Cream Full-fat recommended for best texture.
  • 8 oz Cream Cheese Softened to room temperature.
  • 10 oz Canned Diced Tomatoes and Green Chiles (Rotel) Drained very well.
  • 1 packet Taco Seasoning Approximately 1 oz.
  • 2 cups Shredded Mexican Cheese Blend Or sharp cheddar, plus more for garnish.

Equipment

  • 1 Mixing Bowl
  • 1 Spatula or Hand Mixer

Method

  1. In a medium mixing bowl, beat the softened cream cheese and sour cream together until completely smooth.
  2. Add the taco seasoning and the well-drained diced tomatoes and green chiles. Mix until everything is evenly combined.
  3. Gently fold in the 2 cups of shredded cheese until just combined.
  4. For best results, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with extra cheese before serving with your favorite chips, crackers, or veggies.

Notes

Tip 1: For the smoothest dip, make sure your cream cheese is fully softened before you begin mixing.
Tip 2: Draining the diced tomatoes and green chiles is the most important step to prevent a watery dip. Use a fine-mesh sieve for best results.
Tip 3: This dip can be made up to 24 hours in advance. Keep it covered in the refrigerator until you're ready to serve.
