  • 4 boneless, skinless chicken breasts about 1.5 lbs, pounded to even thickness
  • 1 tablespoon olive oil
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1 teaspoon Italian seasoning
  • 1 cup creamy Caesar dressing
  • 1/2 cup sour cream or full-fat Greek yogurt
  • 1 cup grated Parmesan cheese divided
  • 3 cloves garlic minced

Method
 

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry and season them generously on both sides with salt, pepper, and Italian seasoning.
  2. In a large, oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
  3. In a medium bowl, whisk together the Caesar dressing, sour cream, 1/2 cup of the grated Parmesan cheese, and the minced garlic until well combined.
  4. Return the seared chicken to the skillet. Pour the creamy Caesar sauce evenly over the chicken.
  5. Sprinkle the remaining 1/2 cup of Parmesan cheese over the top. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (165°F) and the sauce is bubbly and golden.

Notes

For best results, use freshly grated Parmesan cheese as it melts better than pre-shredded.
