Ingredients

  • 1.5 lbs salmon fillets skinless, cut into 4 equal portions
  • 1 lb jumbo shrimp peeled and deveined
  • 4 tbsp unsalted butter divided
  • 4 cloves garlic minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley chopped, for garnish
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper adjust to taste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • 1 Large Skillet A cast-iron skillet works best for a great sear.
  • 1 Small Bowl

Method

  1. Pat the salmon fillets and shrimp completely dry with paper towels. In a small bowl, mix together all ingredients for the homemade Cajun seasoning: smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper.
  2. Season the salmon and shrimp on all sides with the Cajun spice blend, pressing gently to make sure it sticks.
  3. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Place the salmon fillets in the hot skillet and cook for 4-5 minutes per side, until golden brown and cooked through. Remove the salmon and set aside.
  4. Reduce heat to medium and add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes per side, until pink and opaque. Do not overcook.
  6. Return the salmon to the skillet. Squeeze the fresh lemon juice over the shrimp and salmon, then sprinkle with chopped fresh parsley. Gently toss to coat everything in the garlic butter sauce. Serve immediately.

Notes

For the best sear, ensure your seafood is patted completely dry before seasoning.
