Prepare the Filling
- Preheat oven to 400°F (200°C). In a large skillet or Dutch oven, melt 1/4 cup of butter over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes. Stir in the garlic and cook for 1 minute more until fragrant.
- Sprinkle the flour over the vegetables and stir for 2 minutes. Slowly whisk in the chicken broth, then the heavy cream. Add Old Bay, parsley, salt, and pepper. Bring to a simmer and cook for 5 minutes, until thickened.
- Remove from heat and gently fold in the raw shrimp, lump crab meat, and frozen peas. Pour the mixture into a 9x13 inch baking dish.
Make the Topping and Bake
- In a medium bowl, combine the baking mix and shredded cheddar cheese. Stir in the cold water until a soft dough forms. Do not overmix.
- Drop spoonfuls of biscuit dough evenly over the seafood filling.
- Bake for 20-25 minutes, or until the filling is bubbly and the biscuit topping is golden brown.
- While baking, combine the 1/4 cup of melted butter and garlic powder. Brush the garlic butter over the hot biscuits immediately after removing from the oven. Let rest for 5-10 minutes before serving.
Notes
For an extra kick, add a pinch of cayenne pepper to the filling.
