Ingredients
  

For the Seafood Filling
  • 1/4 cup Unsalted Butter
  • 1 Yellow Onion finely chopped
  • 2 Carrots peeled and diced
  • 2 stalks Celery diced
  • 3 cloves Garlic minced
  • 1/3 cup All-Purpose Flour
  • 1 1/2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 tsp Old Bay Seasoning
  • 1 tsp Dried Parsley
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 lb Raw Shrimp peeled and deveined
  • 8 oz Lump Crab Meat picked over for shells
  • 1 cup Frozen Peas
For the Cheddar Bay Biscuit Topping
  • 2 1/2 cups Baking Mix such as Bisquick
  • 1 1/2 cups Sharp Cheddar Cheese shredded
  • 3/4 cup Cold Water
  • 1/4 cup Unsalted Butter melted
  • 1/2 tsp Garlic Powder

Method
 

Prepare the Filling
  1. Preheat oven to 400°F (200°C). In a large skillet or Dutch oven, melt 1/4 cup of butter over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes. Stir in the garlic and cook for 1 minute more until fragrant.
  2. Sprinkle the flour over the vegetables and stir for 2 minutes. Slowly whisk in the chicken broth, then the heavy cream. Add Old Bay, parsley, salt, and pepper. Bring to a simmer and cook for 5 minutes, until thickened.
  3. Remove from heat and gently fold in the raw shrimp, lump crab meat, and frozen peas. Pour the mixture into a 9x13 inch baking dish.
Make the Topping and Bake
  1. In a medium bowl, combine the baking mix and shredded cheddar cheese. Stir in the cold water until a soft dough forms. Do not overmix.
  2. Drop spoonfuls of biscuit dough evenly over the seafood filling.
  3. Bake for 20-25 minutes, or until the filling is bubbly and the biscuit topping is golden brown.
  4. While baking, combine the 1/4 cup of melted butter and garlic powder. Brush the garlic butter over the hot biscuits immediately after removing from the oven. Let rest for 5-10 minutes before serving.

Notes

For an extra kick, add a pinch of cayenne pepper to the filling.
You can substitute the shrimp and crab with other seafood like lobster, scallops, or firm white fish like cod.
