Ingredients

  • 2 tbsp Unsalted Butter
  • 2 tbsp All-Purpose Flour
  • 1 cup Whole Milk
  • 8 oz Sharp Cheddar Cheese freshly shredded from a block
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Salt or to taste

Equipment

  • 1 Saucepan
  • 1 Whisk

Method

  1. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute, stirring constantly.
  2. Slowly pour in the whole milk while whisking continuously to prevent lumps. Continue cooking and stirring until the sauce thickens slightly, about 5-7 minutes.
  3. Remove the pan from the heat. Gradually add the freshly shredded cheddar cheese, stirring until smooth and completely melted before adding more.
  4. Stir in the garlic powder, smoked paprika, and salt. Serve immediately drizzled over hot fries.

Notes

Shred Your Own Cheese: For the smoothest sauce, always buy a block of cheese and shred it yourself. Pre-shredded cheese contains anti-caking agents that can make the sauce grainy.
Low Heat is Key: Do not let the sauce boil after adding the cheese, as high heat can cause it to separate and become oily.
