- Mash the cooked cauliflower to a coarse texture. Transfer it to a clean kitchen towel and squeeze firmly to remove as much moisture as possible. This step is crucial.
- In a large bowl, mix the dried cauliflower, cheddar cheese, Parmesan cheese, Panko breadcrumbs, beaten eggs, parsley, garlic powder, onion powder, salt, and pepper until well combined.
- Form the mixture into 12 patties, each about 2-3 inches in diameter and 1/2 inch thick.
- Heat olive oil in a large skillet over medium heat. Cook the patties in batches for 3-4 minutes per side, until golden brown and crispy. Alternatively, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
