Ingredients
  

  • 1 medium head cauliflower cut into florets
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Panko breadcrumbs use almond flour for keto
  • 2 large eggs beaten
  • 2 tbsp fresh parsley chopped
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 2 tbsp olive oil for frying

Method
 

  1. Steam or boil the cauliflower florets for 5-7 minutes until tender. Drain well and let it cool slightly.
  2. Mash the cooked cauliflower to a coarse texture. Transfer it to a clean kitchen towel and squeeze firmly to remove as much moisture as possible. This step is crucial.
  3. In a large bowl, mix the dried cauliflower, cheddar cheese, Parmesan cheese, Panko breadcrumbs, beaten eggs, parsley, garlic powder, onion powder, salt, and pepper until well combined.
  4. Form the mixture into 12 patties, each about 2-3 inches in diameter and 1/2 inch thick.
  5. Heat olive oil in a large skillet over medium heat. Cook the patties in batches for 3-4 minutes per side, until golden brown and crispy. Alternatively, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
  6. Serve the Cheesy Cauliflower Patties warm with your favorite dipping sauce.
