  • 2 medium zucchini about 1 lb, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup grated Parmesan cheese freshly grated is best
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash, trim, and slice the zucchini into 1/2-inch thick rounds. Pat the rounds completely dry with a paper towel.
  3. In a large bowl, toss the zucchini rounds with olive oil, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
  4. Arrange the zucchini in a single, non-overlapping layer on the prepared baking sheet.
  5. Sprinkle the grated Parmesan cheese evenly over the zucchini rounds.
  6. Bake for 15-20 minutes, or until the zucchini is tender-crisp and the cheese is melted and golden brown.
