- In a small bowl, mash the avocado with the lime juice. Season with a pinch of salt and pepper. Set aside.
- Lay out the 4 slices of bread. Spread butter on one side of each slice. On the un-buttered side of two slices, place one slice of provolone cheese, followed by 1/2 cup of shredded chicken, and then half of the avocado mixture. Top with the second slice of cheese.
- Place the remaining two slices of bread on top, butter-side-up. Preheat a large non-stick skillet or pan over medium heat.
- Carefully place the sandwiches in the hot skillet. Grill for 3-4 minutes per side, until the bread is golden brown and crispy and the cheese is fully melted and gooey.
- Slice the melts in half and serve immediately for the best experience.

Tip 1: Use a ripe but firm avocado for the best texture.
