Ingredients
  

  • 4 slices sourdough bread or other sturdy bread
  • 2 tbsp butter softened
  • 1 cup cooked chicken shredded or diced
  • 1 large ripe avocado
  • 1 tsp lime juice
  • 4 slices provolone cheese or Monterey Jack
  • Salt and freshly ground black pepper to taste

  • 1 Skillet or Pan
  • 1 Small Bowl

Method
 

  1. In a small bowl, mash the avocado with the lime juice. Season with a pinch of salt and pepper. Set aside.
  2. Lay out the 4 slices of bread. Spread butter on one side of each slice. On the un-buttered side of two slices, place one slice of provolone cheese, followed by 1/2 cup of shredded chicken, and then half of the avocado mixture. Top with the second slice of cheese.
  3. Place the remaining two slices of bread on top, butter-side-up. Preheat a large non-stick skillet or pan over medium heat.
  4. Carefully place the sandwiches in the hot skillet. Grill for 3-4 minutes per side, until the bread is golden brown and crispy and the cheese is fully melted and gooey.
  5. Slice the melts in half and serve immediately for the best experience.

Notes

Tip 1: Use a ripe but firm avocado for the best texture.
Tip 2: Shredding your own cheese from a block results in a much better melt.
Tip 3: Don't overheat your pan, as this can cause the bread to burn before the cheese melts.
