- In a small bowl, mash the avocado with lime juice, salt, and pepper. Set aside. If your chicken isn't seasoned, toss the shredded chicken with a pinch of salt and pepper.
- Spread the softened butter evenly on one side of each slice of bread.
- Heat a large non-stick skillet over medium-low heat. Place two slices of bread in the skillet, butter-side down. Layer half of the cheese, all of the shredded chicken, and the remaining half of the cheese on top of the bread in the skillet. Top with the remaining two slices of bread, butter-side up.
- Grill for 3-5 minutes per side, until the bread is golden brown and crispy and the cheese is fully melted. Press down gently with a spatula as it cooks.
- Remove the sandwiches from the skillet. Carefully open them and spread the mashed avocado mixture over the melted chicken and cheese. Close the sandwiches, slice in half, and serve immediately.
Notes
For an extra crispy crust, try using mayonnaise instead of butter on the outside of the bread.
Don't add the avocado before toasting, as it can become warm and discolored. Adding it fresh at the end keeps it vibrant and creamy.
