For the Meatballs
  • 1 lb ground chicken
  • 1 cup whole milk ricotta cheese
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg lightly beaten
  • 2 cloves garlic minced
  • 1 tsp onion powder
  • 1 tbsp dried parsley
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, add the ground chicken, ricotta cheese, Panko breadcrumbs, grated Parmesan, lightly beaten egg, minced garlic, onion powder, dried parsley, Italian seasoning, salt, and black pepper.
  3. Gently mix the ingredients with your hands or a fork until just combined. Be careful not to overmix.
  4. Using a medium cookie scoop or your hands, form the mixture into 1.5-inch meatballs. Place them in a single layer on the prepared baking sheet.
  5. Bake for 18-22 minutes, until the meatballs are golden brown, firm to the touch, and have reached an internal temperature of 165°F (74°C).
  6. Serve immediately with your favorite sauce, pasta, or as desired.
