Ingredients
  

  • 400 g Linguine or Spaghetti
  • 500 g Large Prawns Peeled and deveined
  • 4 cloves Garlic Thinly sliced
  • 1 tsp Red Chilli Flakes Adjust to taste
  • 4 tbsp Extra Virgin Olive Oil
  • 60 ml Dry White Wine Or chicken broth
  • 1 Lemon Juice and zest
  • 1/2 cup Fresh Parsley Chopped
  • Salt and Black Pepper To taste

Method
 

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant.
  3. Add prawns to the skillet, season with salt and pepper, and cook for 1-2 minutes per side until pink. Remove from skillet and set aside.
  4. Deglaze the skillet with white wine, simmering for a minute. Stir in lemon juice and half the parsley.
  5. Add drained pasta and cooked prawns to the skillet. Toss to combine, adding reserved pasta water as needed to create a silky sauce.
  6. Turn off the heat and stir in the remaining parsley and lemon zest. Serve immediately.

Notes

Tip 1: Don't overcrowd the pan when cooking the prawns; cook them in batches if necessary to ensure they sear properly.
Tip 2: The quality of your olive oil makes a big difference here, so use the best you can.
Tip 3: Adjust the chilli flakes to your personal preference. You can always add more at the end!
