  • 1/2 cup unsalted butter softened
  • 1/2 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie plate or a 9-inch cast-iron skillet and set aside.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed for 2-3 minutes until light and fluffy.
  3. Add the egg, egg yolk, and vanilla extract. Beat on medium speed until just combined. Scrape down the sides of the bowl as needed.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. Fold in the semi-sweet chocolate chips.
  6. Spread the dough evenly into the prepared pie plate or skillet. Bake for 25-30 minutes, or until the edges are golden brown and the center is set but still soft. Let cool on a wire rack for at least 15 minutes before serving.

Notes

Do Not Overbake: For a perfectly gooey center, the middle should look slightly underdone when you remove it from the oven.
Serve Warm: This cookie pie is best enjoyed warm, topped with a scoop of vanilla ice cream.
