Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Cranberry Orange Glaze
  • 1 cup whole berry cranberry sauce
  • 1/4 cup orange juice freshly squeezed
  • 1 tablespoon orange zest
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic minced

  • 1 Meat Thermometer
  • 1 Mixing Bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
  2. In a medium bowl, whisk together the whole berry cranberry sauce, orange juice, orange zest, honey, soy sauce, Dijon mustard, and minced garlic. Set aside.
  3. Heat olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes per side, until golden brown.
  4. Transfer the skillet to the preheated oven and bake for 15 minutes.
  5. Carefully remove the skillet from the oven. Spoon half of the glaze over the chicken. Return to the oven and bake for another 5-7 minutes.
  6. Spoon the remaining glaze over the chicken and bake for a final 5 minutes, or until the chicken is cooked through and an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  7. Remove from the oven and let the chicken rest in the skillet for 5 minutes before serving. Spoon extra glaze from the pan over the chicken when serving.

Notes

Tip 1: For an extra layer of flavor, add a sprig of fresh rosemary or thyme to the skillet when you add the glaze.
Tip 2: Ensure your skillet is oven-safe. If you don't have one, you can sear the chicken in a regular skillet and transfer it to a baking dish to finish in the oven.
