Ingredients
  

  • 1 English cucumber sliced into rounds
  • 1 pint cherry tomatoes halved
  • 8 oz fresh mozzarella pearls
  • 0.5 cup red onion thinly sliced
  • 0.25 cup fresh basil leaves chopped
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp dried oregano
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. In a small jar with a lid, combine the extra virgin olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper. Secure the lid and shake vigorously until the vinaigrette is well combined and slightly thickened. Alternatively, whisk all ingredients together in a small bowl.
  2. In a large salad bowl, add the sliced cucumber, halved cherry tomatoes, mozzarella pearls, and thinly sliced red onion.
  3. Pour the prepared vinaigrette over the salad ingredients. Add the chopped fresh basil.
  4. Gently toss everything together until all the ingredients are evenly coated with the dressing.
  5. For the best flavor, let the salad sit for 5-10 minutes to allow the flavors to meld. Serve immediately and enjoy!

Ingredient Tip: Use Persian or English cucumbers for the best crunch and minimal seeds.
