For the Peach Cake
  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.25 cup light brown sugar packed
  • 2 tsp baking powder
  • 0.25 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter melted
  • 2 large eggs room temperature
  • 0.5 cup sour cream room temperature
  • 1 tsp vanilla extract
  • 3 medium peaches peeled and sliced
For the Optional Cinnamon Sugar Topping
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.
  3. Add the melted butter, room temperature eggs, sour cream, and vanilla extract to the dry ingredients. Mix with a spatula until just combined. Do not overmix.
  4. Spread half of the batter evenly into the prepared pan. Arrange a single layer of sliced peaches over the batter.
  5. Top with the remaining batter and arrange the rest of the peaches on top. In a small bowl, mix the 2 tbsp sugar and 1 tsp cinnamon, then sprinkle over the peaches.
  6. Bake for 40-50 minutes, or until a wooden skewer inserted into the center of the cake comes out clean.
  7. Let the cake cool in the pan on a wire rack for at least 15-20 minutes before slicing and serving. Enjoy warm or at room temperature.
