Ingredients
  

  • 1 English muffin split
  • 1 large egg
  • 1 sausage patty cooked
  • 1 slice American cheese
  • 1 tablespoon butter divided
  • Salt and pepper to taste

Method
 

  1. Cook the sausage patty in a non-stick skillet over medium-high heat until browned and cooked through, about 3-4 minutes per side. Remove from the skillet. Butter the cut sides of the English muffin and toast in the same skillet until golden brown.
  2. Melt the remaining butter in the skillet over medium heat. Whisk the egg with salt and pepper. Pour into the skillet (using a biscuit cutter or mason jar ring for a round shape, if desired) and cook for 2-3 minutes, or until set.
  3. Place the slice of cheese on the bottom half of the toasted muffin. Top with the cooked sausage patty, followed by the cooked egg. Place the muffin top on to complete the sandwich and serve immediately.

Notes

For meal prep, allow all components to cool completely before assembling. Wrap individually in plastic wrap and freeze for up to 2 months.
Reheat from frozen by wrapping in a paper towel and microwaving for 60-90 seconds.
