- Line a baking sheet with parchment paper.
- In a medium bowl, combine the Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir until the mixture is completely smooth.
- Transfer the mixture to a piping bag or a zip-top bag with the corner cut off. Pipe 1-1.5 inch round dollops onto the prepared baking sheet.
- Place the baking sheet in the freezer for at least 2-3 hours, or until the bites are completely solid.
- (Optional) Once frozen, melt the dark chocolate chips. Drizzle the melted chocolate over the frozen yogurt bites.
- Return the bites to the freezer for another 15-20 minutes for the chocolate to set. Store in an airtight container in the freezer.
