- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- Season chicken pieces with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through (5-7 minutes). Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
- Pour in chicken broth, scraping up any browned bits from the pan. Whisk in heavy cream and bring to a simmer. Cook for 2-3 minutes to thicken slightly.
- Reduce heat to low and stir in the grated Parmesan cheese until fully melted and the sauce is smooth.
- Return the cooked chicken to the skillet. Add the drained pasta and toss to combine. If needed, add reserved pasta water a little at a time to reach desired sauce consistency. Stir in fresh parsley and serve immediately.
