- Preheat oven to 425°F (220°C).
- Wash, dry, and cut potatoes into uniform 1 to 1.5-inch chunks.
- In a large bowl, combine the potato chunks, olive oil, melted butter, minced garlic, salt, and pepper. Toss well to ensure the potatoes are fully coated.
- Spread the seasoned potatoes in a single, even layer on a large baking sheet. Do not overcrowd the pan.
- Roast for 20-25 minutes, until they start to brown.
- Remove the pan from the oven, sprinkle evenly with the grated Parmesan cheese, and toss gently.
- Return to the oven and roast for another 10-15 minutes, or until the potatoes are golden brown, crispy, and tender on the inside.
- Garnish with fresh parsley and serve immediately.
Notes
For the crispiest potatoes, make sure they are completely dry before tossing with oil.
Ensure the potatoes are in a single layer on the baking sheet; use two sheets if needed to avoid steaming.
Freshly grating your Parmesan cheese will result in a better melt and flavor.
