  • 2 lbs Yukon Gold or Red Potatoes cut into 1 to 1.5-inch chunks
  • 3 tbsp Olive Oil
  • 2 tbsp Unsalted Butter melted
  • 4 cloves Garlic minced
  • 1/2 cup Parmesan Cheese freshly grated
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper freshly ground
  • 2 tbsp Fresh Parsley chopped, for garnish

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Wash, dry, and cut potatoes into uniform 1 to 1.5-inch chunks.
  3. In a large bowl, combine the potato chunks, olive oil, melted butter, minced garlic, salt, and pepper. Toss well to ensure the potatoes are fully coated.
  4. Spread the seasoned potatoes in a single, even layer on a large baking sheet. Do not overcrowd the pan.
  5. Roast for 20-25 minutes, until they start to brown.
  6. Remove the pan from the oven, sprinkle evenly with the grated Parmesan cheese, and toss gently.
  7. Return to the oven and roast for another 10-15 minutes, or until the potatoes are golden brown, crispy, and tender on the inside.
  8. Garnish with fresh parsley and serve immediately.

Notes

For the crispiest potatoes, make sure they are completely dry before tossing with oil.
Ensure the potatoes are in a single layer on the baking sheet; use two sheets if needed to avoid steaming.
Freshly grating your Parmesan cheese will result in a better melt and flavor.
