Ingredients
  

For the Salad
  • 1 pint cherry or grape tomatoes halved
  • 1 large English cucumber chopped into 1/2-inch pieces
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1 block feta cheese (approx. 7 oz) kept whole
For the Vinaigrette
  • 1/4 cup extra virgin olive oil good quality
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp sea salt or to taste
  • 1/4 tsp black pepper freshly ground

Equipment

Method
 

  1. In a small bowl or jar, combine the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper. Whisk or shake well to combine.
  2. In a large serving bowl, add the halved tomatoes, chopped cucumber, thinly sliced red onion, and Kalamata olives.
  3. Pour the vinaigrette over the vegetables and toss gently to coat everything evenly.
  4. Place the entire block of feta cheese on top of the salad. Drizzle with a little more olive oil and sprinkle with extra oregano if desired. Serve immediately.
