Ingredients
  

For the Meatballs
  • 1 lb lean ground turkey 93/7 recommended
  • 1/2 cup crumbled feta cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated yellow onion
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 large egg lightly beaten
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • 1 Large Baking Sheet
  • 1 Large Mixing Bowl
  • 1 Box grater

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, gently combine the ground turkey, feta cheese, panko breadcrumbs, grated onion, minced garlic, parsley, dill, egg, lemon zest, lemon juice, salt, and pepper. Mix with your hands until just combined, being careful not to overmix.
  3. Roll the mixture into 1.5-inch meatballs and place them in a single layer on the prepared baking sheet.
  4. Bake for 18-22 minutes, or until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  5. Serve warm with your favorite sides and a dollop of tzatziki sauce, if desired.

Notes

Tip 1: For the juiciest meatballs, use 93/7 ground turkey and grate the onion instead of chopping it.
Tip 2: Do not overmix the meat mixture, as this can result in tough meatballs.
Tip 3: Use a cookie scoop for uniformly sized meatballs that will cook evenly.
