- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
- In a medium bowl, whisk together 1 3/4 cups all-purpose flour, pumpkin pie spice, baking soda, and salt.
- In a separate large bowl, whisk the pumpkin purée, Greek yogurt, eggs, maple syrup, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing with a spatula until just combined. Do not overmix.
- Pour the batter into the prepared pan and spread evenly.
- To make the crumble, combine 3/4 cup flour, oats, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
- Sprinkle the crumble mixture evenly over the batter.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan on a wire rack before cutting and serving.
