Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup pumpkin purée not pumpkin pie filling
  • 1 cup plain Greek yogurt full-fat recommended
  • 2 large eggs room temperature
  • 3/4 cup maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1/2 cup cold unsalted butter cut into small cubes

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together 1 3/4 cups all-purpose flour, pumpkin pie spice, baking soda, and salt.
  3. In a separate large bowl, whisk the pumpkin purée, Greek yogurt, eggs, maple syrup, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing with a spatula until just combined. Do not overmix.
  5. Pour the batter into the prepared pan and spread evenly.
  6. To make the crumble, combine 3/4 cup flour, oats, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble mixture evenly over the batter.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan on a wire rack before cutting and serving.

Notes

Do not overmix the batter to ensure the bars stay tender.
Using full-fat Greek yogurt will give you the best, most moist results.
