Ingredients
  

For the Cilantro Lime Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey
  • 3 cloves garlic minced
  • 1/4 cup fresh cilantro chopped
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Bowls
  • 4 cups cooked quinoa or rice
  • 1 can (15 oz) black beans rinsed and drained
  • 1 cup corn fresh, frozen, or canned
  • 1 avocado sliced or diced
  • 1/2 red onion thinly sliced
  • Optional toppings: lime wedges, extra cilantro, cotija cheese

  • 1 Grill or Grill Pan
  • 8 Skewers If using wood, soak in water first.
  • 2 Mixing Bowls

Method
 

  1. In a medium bowl, whisk together the olive oil, lime juice, honey, minced garlic, chopped cilantro, chili powder, cumin, salt, and pepper to create the marinade.
  2. Add the peeled and deveined shrimp to the bowl and toss to coat evenly. Let marinate for 15-20 minutes.
  3. While the shrimp marinates, prepare all other bowl components: cook your base, chop vegetables, and gather toppings.
  4. Preheat your grill or a grill pan to medium-high heat. Thread the marinated shrimp onto skewers.
  5. Grill the shrimp for 2-3 minutes per side, until they are pink, opaque, and slightly charred. Remove from heat.
  6. Assemble the bowls. Start with a layer of your chosen base, then top with the grilled shrimp, black beans, corn, avocado, and red onion. Garnish as desired before serving.

Notes

Do not over-marinate the shrimp! The acid from the lime juice can make the shrimp tough if left for more than 30 minutes.
Storage: Store components separately in airtight containers in the refrigerator for up to 3 days.
