  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into 1/2-inch half-moons
  • 1 medium red onion, cut into 1-inch pieces
  • 1 small head broccoli, cut into small florets
  • 2 carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Method
 

  1. Heat the Pan: Place a large skillet or wok over medium-high heat. Add the olive oil and let it get hot until it shimmers slightly.
  2. Sauté Harder Vegetables: Add the carrots and broccoli to the hot pan. Sauté for 3-4 minutes, stirring occasionally, until they begin to brighten in color and become slightly tender.
  3. Add Softer Vegetables: Add the bell peppers, zucchini, and red onion to the skillet. Continue to cook for another 5-7 minutes, stirring frequently, until all vegetables are crisp-tender.
  4. Add Aromatics: Add the minced garlic and Italian seasoning to the pan. Cook for one more minute until the garlic is fragrant. Be careful not to let it burn.
  5. Season and Serve: Remove the skillet from the heat. Season with salt and pepper, toss to combine, and serve immediately.
