- Place your pizza stone in the oven and preheat to 475°F (245°C). Lightly dust a pizza peel with cornmeal. Stretch the pizza dough into a 12-inch circle.
- Toss the chicken chunks with paprika, garlic powder, and salt. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes until a deep golden-brown crust forms. Remove from heat and toss with 1/4 cup (60ml) of BBQ sauce.
- Spread the remaining 1/2 cup (120ml) of BBQ sauce over the dough. Top evenly with the freshly shredded mozzarella cheese, saucy chicken chunks, and vibrant red onion slices.
- Slide the pizza onto the preheated stone. Bake for 12-15 minutes until you achieve a generous layer of bubbly, slightly browned mozzarella cheese and a golden crust.
- Remove from the oven. Drizzle with a little extra BBQ sauce and sprinkle with fresh chopped green cilantro before slicing and serving.
