  • 0.75 cup dark BBQ sauce (180ml) divided use
  • 2 cups whole-milk mozzarella cheese (225g) freshly shredded
  • 0.5 cup red onion (50g) thinly sliced
  • 0.25 cup fresh cilantro (15g) roughly chopped

Step-by-Step Instructions
  1. Place your pizza stone in the oven and preheat to 475°F (245°C). Lightly dust a pizza peel with cornmeal. Stretch the pizza dough into a 12-inch circle.
  2. Toss the chicken chunks with paprika, garlic powder, and salt. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes until a deep golden-brown crust forms. Remove from heat and toss with 1/4 cup (60ml) of BBQ sauce.
  3. Spread the remaining 1/2 cup (120ml) of BBQ sauce over the dough. Top evenly with the freshly shredded mozzarella cheese, saucy chicken chunks, and vibrant red onion slices.
  4. Slide the pizza onto the preheated stone. Bake for 12-15 minutes until you achieve a generous layer of bubbly, slightly browned mozzarella cheese and a golden crust.
  5. Remove from the oven. Drizzle with a little extra BBQ sauce and sprinkle with fresh chopped green cilantro before slicing and serving.
