- In a small bowl, whisk together the low-sodium soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil. In a separate small bowl, mix the cornstarch with 2 tablespoons of water to form a smooth slurry. Set both aside.
- Pat the chicken pieces dry and season with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
- Pour the prepared honey-soy sauce mixture into the skillet over the chicken. Bring to a simmer and cook for 1-2 minutes.
- Re-whisk the cornstarch slurry and pour it into the simmering sauce. Stir continuously for 1-2 minutes until the sauce thickens and coats the chicken in a beautiful glaze.
- Remove from heat. Garnish with sesame seeds and sliced green onions. Serve immediately with your favorite sides.
