Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp vegetable oil
  • Salt and freshly ground black pepper to taste
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Sesame seeds and sliced green onions for garnish

Method
 

  1. In a small bowl, whisk together the low-sodium soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil. In a separate small bowl, mix the cornstarch with 2 tablespoons of water to form a smooth slurry. Set both aside.
  2. Pat the chicken pieces dry and season with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
  3. Pour the prepared honey-soy sauce mixture into the skillet over the chicken. Bring to a simmer and cook for 1-2 minutes.
  4. Re-whisk the cornstarch slurry and pour it into the simmering sauce. Stir continuously for 1-2 minutes until the sauce thickens and coats the chicken in a beautiful glaze.
  5. Remove from heat. Garnish with sesame seeds and sliced green onions. Serve immediately with your favorite sides.

Tip 1: Ensure your pan is hot before adding the chicken to get a nice sear.
