Ingredients
  

For the Salad
  • 5 oz Mixed greens or spinach
  • 2 Honeycrisp apples cored and thinly sliced
  • 4 oz Feta cheese crumbled
  • 1/2 cup Candied pecans roughly chopped
  • 1/3 cup Dried cranberries
  • 1/4 Red onion thinly sliced
For the Honey-Dijon Vinaigrette
  • 1/3 cup Extra virgin olive oil
  • 3 tbsp Apple cider vinegar
  • 1 tbsp Honey
  • 2 tsp Dijon mustard
  • 1/4 tsp Salt or to taste
  • 1/8 tsp Black pepper or to taste

Equipment

  • 1 Large Salad Bowl
  • 1 Small bowl or jar (for dressing)
  • 1 Whisk
  • 1 Sharp Knife

Method
 

  1. In a small bowl or mason jar, combine the olive oil, apple cider vinegar, honey, and Dijon mustard. Whisk or shake vigorously until well-emulsified. Season with salt and pepper to taste.
  2. In a large salad bowl, add the mixed greens, thinly sliced Honeycrisp apples, crumbled feta cheese, candied pecans, dried cranberries, and thinly sliced red onion.
  3. Drizzle about half of the vinaigrette over the salad. Gently toss to combine. Add more dressing as desired.
  4. Serve immediately for the best texture and freshness.
