  • 1/4 cup Red Onion Finely diced
  • 2 tbsp Fresh Cilantro Chopped
  • 1 tbsp Butter or Oil For cooking

Equipment

  • 1 Large Skillet

Method

  1. Make the Hot Honey BBQ Sauce: In a medium bowl, whisk together the BBQ sauce, honey, hot sauce, and apple cider vinegar until smooth.
  2. Prepare the Chicken Filling: Add the shredded chicken to the sauce and stir until the chicken is evenly coated.
  3. Assemble: Lay a tortilla flat. Cover one half with a layer of cheese, followed by the chicken mixture, red onion, cilantro, and another layer of cheese. Fold the other half of the tortilla over the filling.
  4. Cook: Heat butter or oil in a large skillet over medium heat. Cook the quesadilla for 2-4 minutes per side, until the tortilla is golden brown and crispy and the cheese is fully melted.
  5. Serve: Remove from skillet, let it rest for a moment, then slice and serve immediately with your favorite toppings.

Notes

Pro-Tip: Shred your own cheese from a block for the best, smoothest melt.
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or air fryer for best results.
