Ingredients
  

  • 4 boneless, skinless chicken breasts about 1.5 lbs, pounded to even thickness
  • 8 oz block feta cheese packed in brine, drained
  • 1/3 cup honey
  • 2 tbsp hot sauce such as Frank's RedHot or sriracha
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Pat chicken breasts dry. In a small bowl, combine smoked paprika, oregano, salt, and pepper. Rub the seasoning all over the chicken and place it in a 9x13 inch baking dish.
  2. In a separate small bowl, whisk together the olive oil, honey, hot sauce, and minced garlic.
  3. Pour half of the hot honey sauce over the chicken. Place the block of feta in the center of the dish and drizzle the remaining sauce over the feta and chicken.
  4. Bake for 20-25 minutes, or until the chicken is cooked through (reaches an internal temperature of 165°F or 74°C) and the feta is soft and creamy.
  5. Remove from the oven and let rest for a couple of minutes. Garnish with fresh parsley before serving.

Notes

For the best flavor and texture, use a block of feta cheese packed in brine, not pre-crumbled feta.
Adjust the amount of hot sauce to your personal preference for spiciness.
A meat thermometer is the best way to ensure your chicken is perfectly cooked and juicy.
