Ingredients
  

For the Meatballs
  • 1 lb Ground Beef 80/20 blend recommended
  • 1/3 cup Almond Flour
  • 1/4 cup Grated Parmesan Cheese
  • 1 Large Egg
  • 2 cloves Garlic minced
  • 1 tsp Italian Seasoning
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
For the Garlic Butter Sauce
  • 1/2 cup Salted Butter
  • 4 cloves Garlic minced
  • 1/4 cup Chicken Broth
  • 2 tbsp Fresh Parsley chopped, for garnish

Equipment

  • 1 Large Bowl
  • 1 Baking Sheet
  • 1 Large Skillet

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, almond flour, Parmesan cheese, egg, 2 cloves of minced garlic, Italian seasoning, onion powder, salt, and pepper. Mix with your hands until just combined. Do not overmix.
  3. Roll the mixture into approximately 1.5-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes, or until browned and cooked through.
  5. While the meatballs bake, melt the butter in a large skillet over medium heat. Add the remaining 4 cloves of minced garlic and cook until fragrant, about 1 minute.
  6. Stir in the chicken broth and bring to a simmer. Cook for 2-3 minutes.
  7. Transfer the baked meatballs to the skillet and gently toss to coat them in the garlic butter sauce.
  8. Garnish with fresh parsley and serve immediately.

Notes

For the best flavor, use fresh garlic instead of garlic powder.
You can substitute ground turkey or pork for the ground beef.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
