Ingredients
  

For the Reuben Roll-Ups
  • 8 slices Swiss cheese Good quality, pre-sliced
  • 1/2 lb thinly sliced corned beef About 8-12 slices
  • 1 cup sauerkraut Drained and squeezed very dry
For the Keto Thousand Island Dressing
  • 1/2 cup mayonnaise Avocado oil based recommended
  • 2 tbsp sugar-free ketchup
  • 1 tbsp sugar-free dill pickle relish
  • 1 tsp minced onion
  • 1/4 tsp paprika

Method
 

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. While the oven preheats, prepare the Keto Thousand Island Dressing. In a small bowl, whisk together the mayonnaise, sugar-free ketchup, dill pickle relish, minced onion, and paprika until smooth. Set aside.
  3. Arrange the Swiss cheese slices on the prepared baking sheet in a single layer, ensuring they do not overlap. Bake for 5-7 minutes, or until the edges are golden and the cheese is bubbly.
  4. Remove the baking sheet from the oven. Let the cheese cool for about 1-2 minutes. It needs to be cool enough to handle but still pliable.
  5. Working quickly, spread a thin layer of the prepared dressing over each slice of cheese. Top with a slice or two of corned beef and a sprinkle of the well-drained sauerkraut.
  6. Tightly roll each cheese slice into a log. Place them back on the baking sheet, seam-side down.
  7. Return the baking sheet to the oven and bake for another 10-12 minutes, or until the roll-ups are heated through and the cheese is firm and crispy.
  8. Let them cool for a few minutes before slicing each roll-up into 1-inch pinwheels. Serve warm with extra dressing for dipping.

Notes

Crucial Tip: The most important step for crispy roll-ups is to squeeze all excess liquid from the sauerkraut. Use paper towels or a cheesecloth to press out as much moisture as possible.
Make-Ahead: You can assemble the roll-ups ahead of time and store them in the fridge. Bake just before serving for the best texture.
