Method
- Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- While the oven preheats, prepare the Keto Thousand Island Dressing. In a small bowl, whisk together the mayonnaise, sugar-free ketchup, dill pickle relish, minced onion, and paprika until smooth. Set aside.
- Arrange the Swiss cheese slices on the prepared baking sheet in a single layer, ensuring they do not overlap. Bake for 5-7 minutes, or until the edges are golden and the cheese is bubbly.
- Remove the baking sheet from the oven. Let the cheese cool for about 1-2 minutes. It needs to be cool enough to handle but still pliable.
- Working quickly, spread a thin layer of the prepared dressing over each slice of cheese. Top with a slice or two of corned beef and a sprinkle of the well-drained sauerkraut.
- Tightly roll each cheese slice into a log. Place them back on the baking sheet, seam-side down.
- Return the baking sheet to the oven and bake for another 10-12 minutes, or until the roll-ups are heated through and the cheese is firm and crispy.
- Let them cool for a few minutes before slicing each roll-up into 1-inch pinwheels. Serve warm with extra dressing for dipping.
Notes
Crucial Tip: The most important step for crispy roll-ups is to squeeze all excess liquid from the sauerkraut. Use paper towels or a cheesecloth to press out as much moisture as possible.
Make-Ahead: You can assemble the roll-ups ahead of time and store them in the fridge. Bake just before serving for the best texture.
