Ingredients
  

  • 1 lb Ground Beef (85/15) (450g)
  • 1 small head Green Cabbage finely shredded
  • 1 tbsp Avocado Oil (15ml)
  • 1/2 cup Low-Sodium Soy Sauce (120ml) or tamari for gluten-free
  • 1/4 cup Brown Sugar Substitute (48g) such as erythritol or monk fruit blend
  • 1 tbsp Garlic (15g) freshly minced
  • 1 tsp Ginger (5g) freshly minced
  • 1/4 cup Beef Broth (60ml)
  • 1 tsp Toasted Sesame Oil (5ml)
  • 1/4 tsp Xanthan Gum
  • 2 Green Scallions thinly sliced on a diagonal
  • 1 tbsp Toasted Sesame Seeds (9g)

Equipment

  • 1 Large Skillet or Wok 12-inch (30cm) is ideal
  • 1 Small Bowl For whisking the sauce

Method
 

  1. Heat avocado oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook until deeply browned and crumbled. Drain excess grease and set aside.
  2. In the same skillet, cook the shredded cabbage for 3-5 minutes until tender-crisp. Remove from the skillet and place in serving bowls.
  3. In a small bowl, whisk together soy sauce, brown sugar substitute, minced garlic, ginger, and beef broth. Pour into the skillet over medium heat and bring to a simmer for 2-3 minutes.
  4. While whisking, sprinkle the xanthan gum over the sauce until it thickens into a glossy glaze. Return the browned beef to the skillet, stir to coat, and mix in the toasted sesame oil.
  5. Spoon the saucy beef over the cabbage. Garnish with sliced green scallions and toasted sesame seeds. Serve immediately.

Notes

Don't Crowd the Pan: For the best browning, ensure your ground beef has enough space in the skillet. If needed, brown it in two batches.
Toast Your Own Sesame Seeds: For the best flavor, toast raw sesame seeds in a dry skillet over medium heat for 2-3 minutes until fragrant and lightly golden.
