- If dates are dry, soak in hot water for 10 minutes and drain. Add pitted dates to a food processor and pulse until a thick paste forms.
- In a large mixing bowl, stir together the rolled oats, vanilla protein powder, and chia seeds.
- Add the date paste, almond butter, maple syrup, and peppermint extract to the bowl. Mix with a sturdy spoon or your hands until a sticky, uniform dough forms.
- Gently fold the mini chocolate chips into the dough until evenly distributed.
- Scoop 1-2 tablespoons of the mixture and roll into balls. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
