Ingredients
  

  • 1 cup Rolled Oats Use gluten-free if necessary
  • 1/2 cup Vanilla Protein Powder Use a plant-based powder for a vegan option
  • 1/2 cup Almond Butter Creamy and unsweetened
  • 1 cup Medjool Dates Pitted
  • 1/4 cup Mini Chocolate Chips Use dairy-free for a vegan option
  • 1/2 tsp Peppermint Extract
  • 1 tbsp Chia Seeds
  • 1 tbsp Maple Syrup Optional, for extra sweetness

Method
 

  1. If dates are dry, soak in hot water for 10 minutes and drain. Add pitted dates to a food processor and pulse until a thick paste forms.
  2. In a large mixing bowl, stir together the rolled oats, vanilla protein powder, and chia seeds.
  3. Add the date paste, almond butter, maple syrup, and peppermint extract to the bowl. Mix with a sturdy spoon or your hands until a sticky, uniform dough forms.
  4. Gently fold the mini chocolate chips into the dough until evenly distributed.
  5. Scoop 1-2 tablespoons of the mixture and roll into balls. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.

Notes

Consistency Tip: If the mixture is too dry, add a teaspoon of water. If too wet, add a tablespoon of oats.
Storage: Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
