Ingredients

For the Dumplings
  • 1 lb ground pork or ground chicken
  • 1 cup shredded green cabbage
  • 1/2 cup shredded carrots
  • 3 green onions finely chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 24 wonton wrappers square or round
  • 2 tbsp neutral oil like canola or avocado oil, for brushing
For the Dipping Sauce
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp chili garlic sauce or to taste

Equipment

  • 1 Large Baking Sheet
  • 1 Large Mixing Bowl
  • 1 Pastry Brush

Method

  1. Preheat oven to 400°F (200°C). Lightly oil a large baking sheet.
  2. In a large bowl, mix together the ground pork, shredded cabbage, carrots, green onions, minced garlic, grated ginger, 2 tbsp soy sauce, and 1 tsp sesame oil until just combined. Do not overmix.
  3. Place about 1 teaspoon of filling in the center of a wonton wrapper. Moisten the edges with water, fold in half, and press firmly to seal. Repeat with remaining filling and wrappers.
  4. Arrange the dumplings on the prepared baking sheet. Brush the tops and sides of each dumpling with neutral oil.
  5. Bake for 12-15 minutes, until the bottoms are golden brown and crispy and the filling is cooked through.
  6. While the dumplings are baking, whisk together all ingredients for the dipping sauce in a small bowl.
  7. Serve the hot oven-baked dumplings immediately with the dipping sauce.

Notes

Tip 1: Ensure your cabbage is finely shredded and lightly squeezed to remove excess moisture for the best filling texture.
Tip 2: Don't overcrowd the baking sheet. Give the dumplings space to ensure they bake evenly and the bottoms get crispy.
Tip 3: You can assemble the dumplings ahead of time and store them in a single layer on a floured baking sheet in the fridge for a few hours before baking.
