A simple, no-fail recipe for perfect oven-baked meatballs. These juicy, flavorful meatballs are incredibly easy to make and perfect for spaghetti, subs, or appetizers.

Ingredients
  

For the Meatballs
  • 1 lb ground beef 80/20 or 85/15 recommended
  • 1 lb ground pork
  • 1 cup Italian-style breadcrumbs
  • 0.5 cup whole milk
  • 0.5 cup grated Parmesan cheese Freshly grated is best
  • 1 large egg Lightly beaten
  • 0.5 cup yellow onion Finely grated
  • 0.25 cup fresh parsley Finely chopped
  • 2 cloves garlic Minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper Freshly ground

Equipment

  • 1 Large Baking Sheet
  • 1 Large Mixing Bowl
  • 1 Cookie Scoop (optional) For uniform meatballs

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper.
  2. In a large bowl, stir together the breadcrumbs and milk. Let it stand for 5 minutes until the milk is absorbed.
  3. Add the beaten egg, grated Parmesan, grated onion, minced garlic, parsley, oregano, salt, and pepper to the breadcrumb mixture. Stir to combine.
  4. Add the ground beef and ground pork. Use your hands to gently mix until just combined. Do not overwork the mixture.
  5. Roll the mixture into 1.5-inch meatballs (about 2 tablespoons each) and place them in a single layer on the prepared baking sheet.
  6. Bake for 18-22 minutes, until browned and cooked through. An instant-read thermometer should register 165°F (74°C).

Notes

Do Not Overmix: Gently combine the meat with other ingredients to ensure tender meatballs.
Storage: Store cooked meatballs in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
