Ingredients

  • 4 cups chicken broth low-sodium
  • 1/2 cup pastina pasta such as stelline or acini di pepe
  • 2 tbsp unsalted butter
  • 1/4 cup Parmesan cheese freshly grated
  • Salt and freshly cracked black pepper to taste

Equipment

  • 1 Medium Saucepan
  • 1 Cheese grater

Method

  1. In a medium saucepan, bring the chicken broth to a rolling boil over medium-high heat.
  2. Add the pastina pasta to the boiling broth. Cook according to package directions, typically 6-8 minutes, stirring occasionally until the pasta is tender.
  3. Once the pasta is cooked, reduce the heat to low. Stir in the unsalted butter and freshly grated Parmesan cheese until they are completely melted and the soup becomes creamy.
  4. Season with salt and a generous amount of freshly cracked black pepper to taste. Serve immediately while hot.

Notes

Quality Ingredients: Use a high-quality broth and grate your own Parmesan for the best flavor and texture.
Serve Immediately: The soup thickens as it stands, so it's best enjoyed fresh.
Reheating: To reheat, add a splash of broth to the soup to loosen it as you warm it on the stove.
