Ingredients
  

  • 4 large boneless, skinless chicken breasts about 8 oz each
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 4 oz cream cheese softened
  • 1/2 cup jarred roasted red peppers drained and chopped
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach chopped
  • 2 cloves garlic minced

Method
 

  1. Preheat oven to 400°F (200°C). Carefully cut a pocket into the thickest side of each chicken breast. Season chicken inside and out with Italian seasoning, salt, and pepper.
  2. In a medium bowl, combine softened cream cheese, chopped roasted red peppers, feta cheese, chopped spinach, and minced garlic. Mix until well combined.
  3. Spoon the filling mixture evenly into the pockets of each chicken breast. If necessary, secure the opening with toothpicks.
  4. Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear the stuffed chicken for 2-3 minutes per side, until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken's internal temperature reaches 165°F (74°C).
  6. Remove the chicken from the oven and let it rest for 5-10 minutes before slicing and serving. This is crucial for keeping it juicy.
