  • 1.5 cups low-moisture mozzarella cheese Freshly shredded (170g)
  • 4 oz cup-and-char pepperoni Sliced medium-thick (115g)
  • 0.5 cup whole milk ricotta cheese For dolloping (125g)
  • 0.25 cup blue cheese crumbles Added post-bake (35g)
  • 3 tbsp hot honey Glossy sweet heat drizzle (45ml)
  • 2 sprigs fresh rosemary Leaves stripped and roughly chopped (about 1 tbsp / 2g)

Method
 

Step-by-Step Baking Instructions
  1. Place your pizza stone on the middle rack and preheat the oven to 500°F (260°C) for at least 45 minutes. Bring the dough to room temperature for 30 minutes before stretching.
  2. Dust a pizza peel with cornmeal. Stretch the dough into a 12-to-14-inch circle, leaving a slightly thicker rim. Brush the outer rim lightly with olive oil.
  3. Spread the pizza sauce evenly over the dough. Scatter the shredded mozzarella across the sauce, followed by the cup-and-char pepperoni slices.
  4. Drop large dollops of ricotta cheese evenly across the pizza. Launch the pizza onto the preheated stone and bake for 10-12 minutes.
  5. Remove the pizza when the crust is golden-brown and slightly charred. Immediately scatter blue cheese crumbles over the hot pie. Drizzle with hot honey, garnish with fresh rosemary and parmesan, then slice and serve.

Notes

Preheat your pizza stone for the full 45 minutes to ensure a crispy undercarriage.
Do not bake the hot honey; apply it after the pizza comes out of the oven to prevent the sugars from burning.
