- Cook the pasta in a large pot of salted water according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it apart, until browned. Remove with a slotted spoon and set aside.
- In the same skillet, add the sliced bell peppers and onion. Sauté for 8-10 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.
- Stir in the tomato paste and cook for one minute. Add the crushed tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 5 minutes.
- Return the sausage to the skillet along with the drained pasta and Parmesan cheese. Toss to combine. Add reserved pasta water as needed to create a smooth sauce.
- Serve immediately, garnished with additional Parmesan cheese and fresh parsley.
