- Place the chicken breasts in a single layer at the bottom of a 6-quart slow cooker. Season with thyme, rosemary, and black pepper.
- In a medium bowl, whisk together the cream of chicken soup, chicken broth, sour cream, and dried minced onion until well combined.
- Pour the sauce mixture evenly over the chicken breasts.
- Sprinkle the dry stuffing mix evenly over the top of the sauce. Do not stir.
- Cover the slow cooker and cook on LOW for 4-6 hours or on HIGH for 3-4 hours, until the chicken is fully cooked and tender.
- Once cooked, use two forks to shred the chicken directly in the slow cooker. Gently stir everything together to combine. Let it rest for 5 minutes to allow the sauce to thicken slightly before serving.

Tip 1: For the best texture, do not stir the stuffing mix into the sauce before cooking. Layering it on top allows it to steam perfectly.
