Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts about 3-4 breasts
  • 1 box (6 oz) stuffing mix such as Stove Top
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup chicken broth low-sodium is preferred
  • 1/2 cup sour cream
  • 1 tsp dried minced onion
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 tsp black pepper

  • 1 Slow Cooker A 6-quart slow cooker is recommended.

Method
 

  1. Place the chicken breasts in a single layer at the bottom of a 6-quart slow cooker. Season with thyme, rosemary, and black pepper.
  2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, sour cream, and dried minced onion until well combined.
  3. Pour the sauce mixture evenly over the chicken breasts.
  4. Sprinkle the dry stuffing mix evenly over the top of the sauce. Do not stir.
  5. Cover the slow cooker and cook on LOW for 4-6 hours or on HIGH for 3-4 hours, until the chicken is fully cooked and tender.
  6. Once cooked, use two forks to shred the chicken directly in the slow cooker. Gently stir everything together to combine. Let it rest for 5 minutes to allow the sauce to thicken slightly before serving.

Notes

Tip 1: For the best texture, do not stir the stuffing mix into the sauce before cooking. Layering it on top allows it to steam perfectly.
Tip 2: Feel free to add 1-2 cups of frozen mixed vegetables during the last 30 minutes of cook time for a complete one-pot meal.
