Ingredients
  

  • 4 slices sourdough or brioche bread thick-cut
  • 2 tbsp unsalted butter softened
  • 6 oz smoked Gouda cheese shredded
  • 1 Honeycrisp or Granny Smith apple cored and thinly sliced

Equipment

  • 1 Non-stick skillet or pan
  • 1 Spatula
  • 1 Cheese grater

Method
 

  1. Lay out the bread slices and spread the softened butter evenly on one side of each slice. This will be the outside of your sandwich.
  2. Place two slices of bread butter-side-down. Layer half of the shredded smoked Gouda on each slice. Arrange the thin apple slices in a single layer over the cheese. Top the apples with the remaining shredded Gouda.
  3. Place the remaining two slices of bread on top, butter-side-up. Heat a large non-stick skillet over medium-low heat. Carefully place the sandwiches in the skillet.
  4. Grill for 4-5 minutes on each side, until the bread is crisp and golden-brown and the cheese is fully melted. Press down gently with a spatula for an even crust.
  5. Remove from the skillet, slice diagonally, and serve immediately.

Notes

For an even crispier crust, you can substitute the butter with mayonnaise.
Feel free to add a thin layer of fig jam or bacon for extra flavor dimensions.
