Ingredients
  

  • 1 English cucumber sliced
  • 1 lb fresh strawberries hulled and quartered
  • 4 oz feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper freshly ground, or to taste

Method
 

  1. Wash and dry all your produce. Slice the cucumber, hull and quarter the strawberries, and thinly slice the red onion. Roughly chop the fresh mint leaves.
  2. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), and Dijon mustard. Season with salt and freshly ground black pepper to your liking.
  3. In a large salad bowl, gently combine the sliced cucumber, strawberries, red onion, and crumbled feta cheese. Pour the vinaigrette over the salad.
  4. Gently toss everything together until well combined. Garnish with the chopped fresh mint and serve immediately for the best texture and flavor.
