The Ultimate Grilled Chicken Bacon Ciabatta

  • 1 lb boneless skinless chicken breasts (450g) cut into chunks
  • 6 strips thick-cut bacon (170g)
  • 2 large ciabatta rolls (200g total) halved
  • 4 slices pepper jack cheese (115g)
  • 2 tbsp olive oil (30ml)
  • 2 tbsp unsalted butter (30g) softened
  • 1 tsp smoked paprika (3g)
  • 1 tsp garlic powder (3g)
  • 0.5 tsp kosher salt (3g)
  • 0.5 tsp black pepper (1g)

Equipment

  • 1 Cast Iron Skillet For cooking bacon and toasting ciabatta.
  • 1 Baking Sheet Lined with foil for broiling the sandwiches.

Method
 

Preparation and Cooking
  1. Place 6 strips (170g) of bacon into a cold skillet. Turn heat to medium and cook for 8-10 minutes until rigid and crispy. Transfer to a paper towel-lined plate.
  2. Toss 1 lb (450g) chicken chunks with 2 tbsp (30ml) olive oil, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp salt, and 1/2 tsp pepper. Cook in a hot grill pan for 5-7 minutes until seared.
  3. Spread 2 tbsp (30g) softened butter over the cut halves of 2 ciabatta rolls. Toast face down in a hot skillet for 2-3 minutes until golden brown.
  4. Pile cooked chicken and bacon onto the bottom ciabatta halves. Top with 4 slices (115g) pepper jack cheese. Broil on a baking sheet for 60-90 seconds until the cheese is bubbling and oozing.

Notes

Tip 1: Cut uniform chicken chunks so they cook evenly.
Tip 2: Watch the broiler closely so the cheese melts perfectly without burning the bread.
